Vegetarian Cheese

Vegetarian cheeses have come leaps and bounds over the last few years. It used to be that you could barely find a cheese that was made without animal rennet (unless it was naturally a rennet-free cheese like cream cheese). But now, you can find all sorts of vegetarian cheeses: parmesan, cheddar, blue cheese, goat cheese, mozarella and much more. Whole Foods has a pretty large selection of vegetarian cheeses including:

Not every Whole Foods carries every one of these cheeses at all times (and some of these can be found at other grocery stores), so if you are looking for something specific, I suggest you call ahead. Some of these cheeses are vegetarian almost all the time regardless of brand. These include ricotta, mascarpone, and paneer. A general rule is that softer set cheeses lend themselves to being vegetarian.
