On a recent trip to Vancouver, a few of the locals mentioned to me that sushi restaurants in their city were quite accommodating towards vegetarians. Intrigued by this, I set about doing some research. It turns out that compared to what I’ve seen before, this is relatively true. Many of the Japanese restaurants have generous vegetarian options. Places like Hoshi Sushi, Octopus Garden, and Kaide Sushi seem to really stand out with regard to their consideration towards vegetarians. But through my research, I’ve become particularly intrigued by The Eatery. This place features funky fusion fare like spaghetti eastern (udon in a creamy sauce with vegetables that have been cooked in a oriental-style spicy sauce) and curry flavor veggie croquettes. While there are all sorts of vegetable appetizers and entrees, the sushi menu is especially unique. The rolls are made with familiar ingredients as well as with items like kombu, plantain, sundried tomato, and spinach gomae. A number of sauces such as dragon, ponzu and cucumber-wasabi sauce can be added for an even more interesting flair. And the best part is that you can submit your own creation to their website and they will consider adding it to the menu. Check out the image below to see their sushi options or click here to see the whole menu.
While unfortunately, I didn’t have a chance to visit this joint on my trip, you can bet that it will be the first stop I make the next time I go to Vancouver.
