Indulgent, Low-fat Chocolate Mousse

Is one of your New Year’s resolutions to eat better in 2011? Well don’t wait until the party is over to take some action. This year, make Ellie Krieger’s low-fat chocolate mousse. The secret ingredient, silken tofu, cuts out the cream and eggs needed to traditionally make this dish without sacrificing texture (great for people who don’t eat eggs). The dark chocolate and a splash of brandy also provide the rich, intense flavor along with the mood-boosting effects of chocolate without adding the calories of milk chocolate. Serve it with sliced strawberries – a winning combination for a special celebration.

What You Need:
1 package (12.3 ounce) package of silken tofu, drained
1 bar (3.5 to 4 ounces) high quality bittersweet chocolate (70% cacao)
¼ cup unsweetened cocoa powder
¼ cup water
1 tbsp brandy
½ cup sugar
1 package strawberries, washed and sliced (optional)

What to Do:
In a food processor, puree the tofu until extremely smooth. It should be the consistency of yogurt.

In a bowl set over simmering water, add in 3 ounces of chocolate, the cocoa powder, water, and brandy. Stir together until just melted and smooth. Remove from heat and slowly add in the sugar, stirring until smooth. (The mixture will not look creamy and smooth until the sugar is added).

Add the chocolate mixture to the tofu and blend together until completely blended. Pour into a serving bowl or individual ramekins and refrigerate at least one hour. Shave the extra chocolate over the top and serve with sliced strawberries.
