Hot Milk with Chai Masala (Ukalo)

Love the taste of masala chai but already taxed your caffeine quota for the day? Well there is an alternative. Try milk ukalo (oo-ka-low). Milk ukalo is essentially milk that has been brought up to a boil with chai masala, mint, and ginger. For an extra bonus, you can add some dried lemongrass as well. It has a crisper, fresher taste because of the mint but is just as satisfying as a hot cup of chai. So whether you’ve already had five cups of coffee, you don’t want to be up all night or you just want to get more calcium, milk ukalo is a great way to make use of all that chai masala you made earlier!

What You Need:
2 cups of milk (I’ve never tried this with non-dairy milks but I’m sure it could work)
1 tsp chopped fresh mint
1 tsp freshly grated ginger
1 tsp chopped dried lemongrass (optional)
1/4 tsp chai masala
2 tsp sugar

What to Do:
Bring all the ingredients to low boil. Simmer for seven minutes. Strain and serve hot.
