Chai-Spiked Melon Soup

Melon is a deliciously refreshing flavor for the summer. When it’s paired up with chai spice and ginger, it creates the same comforting experience as sipping on warm soup or a cup of Indian tea without causing you to break a sweat. And you don’t have to stand over a hot stove to make it…because all you need to do is blend the ingredients together. If you want to make your own chai spice at home, you can find an easy recipe here – just use pre-powdered spices or a spice/coffee grinder.

What You Need:
3/4 medium cantaloupe, seeded and chopped
1/2 cup fresh orange juice
3/8 tsp chai spice powder
Grated ginger to taste
5-6 large mint leaves minced

What to Do:
Blend all the ingredients together in a blender until smooth. Serve chilled.
