I’ve always loved the combination of almond, coconut and chocolate. For this dessert, I’ve combined those flavors into dessert that is perfect for a holiday gathering. I fill store-bought wonton wrappers with a combination of almonds and coconut. Then I fry them up and dip them in chocolate ganache. It’s an easy, fast and fun recipe to share with your family. Here’s how to do it.
What You Need:
1 package of wonton wrappers
1/3 cup almonds, toasted
1/3 cup unsweetened shredded coconut
1/4 cup sugar
1/4 cup water
Oil for frying
1/2 cup semisweet chocolate
3 tbsp. heavy cream
What to Do:
In a small pot, combine the sugar and water and heat until the water comes to a simmer, stirring constantly so all of the sugar dissolves. Turn off heat and let the simple syrup cool. In the meantime, toast the almonds over medium heat in a dry skillet. Let cool and then chop into small chunks. Combine the almonds with the coconut and 2 -3 tablespoons of the simple syrup.
Heat about a quarter inch of oil in a deep skillet or pot over medium heat. While the oil is heating, make the wontons. Place about 1 heaping teaspoon of coconut-almond mixture in the center. Wet the edges of the wonton with water and fold into a triangle, trying to get rid of as much air as possible. This is a good video showing how to do this. Once all of the filling is used up (about 15-20 wontons) begin to fry them just a few at a time until they are golden on both sides. Let cool on a paper towel lined plate or bowl.
While the wontons are cooling, make the ganache. Place the chocolate and cream a heat-proof bowl over a pot of simmering water. Stir together until the chocolate is melted and combined with cream. Dip the wonton triangles in the chocolate and let cool on wire rack or parchment paper until the chocolate has solidified (about an hour).
